...the pinion depth is typically set with one set of shims on the pinion itself, which move the pinion forward and backwards relative to the differential housing, either closer or farther away from the axle centerline. And backlash is set with another set of shims between the carrier and the differential housing, moving the carrier/ring gear left/right, either closer or farther away from the pinion. The pinion depth and backlash will interact. Imagine that if you move the pinion in closer to the axles, then backlash has probably changed a little, has probably gotten tighter, and you should therefore change the shim pack on the carrier bearings to compensate. So technically speaking the shimming that you are referring to, which is really adjustment of backlash, does not affect pinion depth. What is more proper to say is that if you have the wrong pinion depth, it will not matter if the backlash is correct, no amount of backlash shimming will fix it. Said another way, you can have the backlash in spec, but still have the wrong pinion depth. They'll still whine like an AssSpec customer waitin' on parts.
